This is a simple recipe made in honor of my grandmother's birthday. It’s always been a family favorite and a favorite at pot lucks. It’s delicious!
Ingredients:
- 1 lb. ditalini macaroni
- 1 – 1½ c mayonnaise (to taste)
- 2 – 3 Tbs onion powder (to taste)
- 1 Tbs parsley flakes
- 1 tsp salt
- Sweet paprika or parsley for garnish (optional)
Directions:
- Bring a large pot of salted water to a boil. Add the ditalini, stirring occasionally, and cook until tender (about 8 minutes). Pour into a large sieve and rinse with cold water until the pasta is cool. Allow the water to drain.
- In a large bowl, gently fold the pasta, mayonnaise, onion power, parsley flakes, and salt together until uniformly mixed. Be sure to use onion powder and not granulated or minced onion to retain the correct texture.
- Place in an airtight container and refrigerate. The salad can be eaten right away, but it tastes even better the next day.
