Ingredients:
- 16 oz. green split peas, dry
- 8 c water
- 1 c celery, sliced
- ½ yellow onion, roughly chopped
- 1 bay leaf
- small pinch cayenne
- small pinch thyme
- 2½ tsp salt
- ⅛ tsp pepper
Directions:
- Check the peas for stones then rinse thoroughly.
- In a large pot, stir together all ingredients.
- Bring the mixture to a boil and keep on a bubbling simmer for 20 minutes.
- Reduce the heat to a low simmer, and cook an additional 30 minutes or the peas are completely tender.
- Allow the mixture to cool slightly, then purée the ingredients together until they are smooth and creamy. I used my Ninja mixer and it worked well.
- Pour the purée back into the pot and heat. Note: The soup can get thick, so add additional water if needed.
- Add the optional Delicious Additions of your choice, then serve hot.
- Enjoy this rustic taste of home!
Delicious Additions:
- breakfast sausage, cooked and sliced (I used Jones All Natural brand)
- diced ham
- bacon bits
- chopped scallions
- croutons
- sour cream
- grated cheese
- parsley
