Betsy’s No Garlic Coleslaw

Ingredients:

  • 7 c green cabbage, shredded
  • 2 c purple cabbage, shredded
  • ½ c red onion, diced (optional)
  • 1 c mayonnaise 
  • ¼ c white sugar (I use organic unbleached)
  • 2 Tbs apple cider vinegar
  • 2 Tbs buttermilk powder (optional)
  • 2 tsp celery seed
  • 1 tsp pepper
  • ½ tsp salt

Directions:
  1. Slice the cabbages thin. I use the slicer blade of my food processer and that works well. Set the sliced cabbage aside in a large bowl.
  2. Add the diced red onion to the cabbage.
  3. In in medium sized mixing bowl, combine the mayonnaise, sugar, cider vinegar, buttermilk powder, celery seed, pepper, and salt. Taste and adjust flavors if desired.
  4. Pour the sauce mixture over the cabbages and gently fold until the cabbage is fully coated. 
  5. Serve with your favorite BBQ or even on a burger! Enjoy! 

Creative Considerations:

Try the following variations:
  • Use a pre-made package of coleslaw mix
  • Add lemon juice for more tang
  • Add mustard for more tang
  • Add shredded carrot
  • Substitute broccoli, cauliflower florets, and bell pepper
  • Make your own flavorful combinations!
