Betsy’s No Garlic Pepperoncini Pesto Sauce

Ingredients:
  • 16 oz. pepperoncini peppers, stems removed
  • ½ c olive oil
  • ¼ c feta cheese, crumbled (or more to taste)
  • 4 tsp organic coconut sugar 
  • 1 tsp basil
  • ¼ tsp smoky paprika
  • ¼ tsp salt

Directions:
  1. Remove the stems from the peppers. 
  2. Toss all ingredients into a food processor or blender. I used my Ninja and it worked really well. 
  3. Taste and adjust flavorings to taste if desired.
  4. Enjoy!

Creative Considerations:
  • Try it as a condiment. This would really make a terrific sandwich spread!
