Betsy’s No Garlic Bella Tarantella-for-the-Taste-Buds Basil Chicken Sausage

Ingredients:
  • 4 lbs. ground chicken
  • 2 Tbs aromatic fresh dried basil (crumbled)
  • 1 Tbs minced onion
  • 2 Tbs onion powder
  • 1 Tbs Italian seasoning
  • 2+ Tbs olive oil
  • 2 tsp fennel seed
  • 1½ tsp ground mustard
  • 1 tsp ground oregano
  • 1 tsp salt
  • ½ tsp sage
  • ¼ tsp ground pepper
  • ¼ tsp paprika
Directions:
  1. Mix thoroughly.
  2. For ground sausage: brown in a skillet over medium heat using a little olive oil in the pan. For meatballs: shape into a ball and either fry on all sides with oil, or bake on an oiled baking sheet at 350 F for approximately 15-20 minutes, or until no longer pink in the middle.
  3. Drain excess fat.
Creative Considerations:

Add to Betsy's Sensationally Saucy Tomato Marinara for a versatile Ragu that can be used to make a lovely, layered lasagna, pasta sauce, or serve on burger buns for sloppy joes. YUM!
