Ingredients:
- 2 lbs. crab meat (I used imitation crab chunks)
- 4 slices bread, crumbled
- 3 eggs
- 1 onion, diced (optional)
- 1 c flour
- ½ c panko, unseasoned
- ½ c mayonnaise
- 4 Tbs parsley flakes
- 2 Tbs capers
- 1 Tbs balsamic vinegar
- 1 Tbs lemon juice
- 2 tsp salt
- 1 tsp sweet paprika
- 1 tsp lemon peel
- ½ tsp Tobasco sauce
- ½ tsp pepper
- butter for frying
- oil for frying
Directions:
- On medium heat, sauté the diced onions in 1 Tbs of butter and 1 Tbs oil until the onions are translucent, then set aside.
- In a large mixing bowl, add and gently mix the crab (broken into small bits), eggs, sautéed onions, mayonnaise, salt, parsley, capers, vinegar, lemon juice, paprika, lemon peel, pepper, and Tobasco sauce. Fold in the bread crumbs, panko, and flour last.
- Heat the butter and oil in a large frying pan on medium heat. Form the crab mixture into 2½ - 3 inch patties, then fry the patties until they are golden brown on each side.
- Allow the patties to rest on a plate lined with paper towels.
- Dollop with Becca's No Garlic Tartar Sauce and garnish as desired. Serve while hot and enjoy!
