Betsy’s No Garlic Chimichurri Sauce

Ingredients:
  • 2 c cilantro leaves, fresh
  • 1 c parsley leaves, fresh (I usually substitute cilantro here for a stronger flavor)
  • 1 c olive oil
  • 1½ Tbs lime juice
  • 1 tsp crushed red pepper
  • 1 tsp ground cumin
  • 1 tsp salt (to taste)
  • ½ tsp ground oregano
  • ½ tsp onion powder (optional)

Directions:
  1. Mix all ingredients in a mixer until fully blended. I used my Ninja and it worked well. 
  2. Sample and adjust seasonings to taste if needed.
  3. Enjoy over steak, chicken, seafood, or even serve as a salsa dip if you like. It’s just good! 

Creative Considerations:
  • To make an excellent marinade, add a tequila and little extra lime and salt! It's amazing!
  • Add ¼ c of Chimichurri Sauce to 2 mashed avocados for a quick guacamole!
