Ingredients:
- ½ rustic baguette cut into ½ inch thick slices
- ¼ c olive oil
- 1 Tbs Betsy’s “OMG!” No Garlic Basil Pesto
- grated Parmigiano-Reggiano cheese
- Pre-heat the oven to 400 F.
- Spray a baking sheet with non-stick spray.
- Cut ½ of a baguette into ½ inch slices.
- Combine the olive oil and pesto in a bowl and stir until mixed.
- Using a BBQ brush, paint the baguette slices on all sides with the oil and pesto mixture and place evenly on the baking sheet.
- Sprinkle the top of each baguette slice with Parmigiano-Reggiano cheese.
- Bake at 400 F for 10 minutes, or until slightly golden and crisp.
- Allow to cool completely. Cut into cubes if desired.
