Betsy’s No Garlic Basil Pesto Croutons

Ingredients:
Directions:
  1. Pre-heat the oven to 400 F. 
  2. Spray a baking sheet with non-stick spray. 
  3. Cut ½ of a baguette into ½ inch slices. 
  4. Combine the olive oil and pesto in a bowl and stir until mixed. 
  5. Using a BBQ brush, paint the baguette slices on all sides with the oil and pesto mixture and place evenly on the baking sheet. 
  6. Sprinkle the top of each baguette slice with Parmigiano-Reggiano cheese. 
  7. Bake at 400 F for 10 minutes, or until slightly golden and crisp. 
  8. Allow to cool completely. Cut into cubes if desired.
