Ingredients:
- 2 c cilantro leaves, fresh
- 1 c parsley leaves, fresh (I usually substitute cilantro here for a stronger flavor)
- 1 c olive oil
- 1½ Tbs lime juice
- 1 tsp crushed red pepper
- 1 tsp ground cumin
- 1 tsp salt (to taste)
- ½ tsp ground oregano
- ½ tsp onion powder (optional)
Directions:
- Mix all ingredients in a mixer until fully blended. I used my Ninja and it worked well.
- Sample and adjust seasonings to taste if needed.
- Enjoy over steak, chicken, seafood, or even serve as a salsa dip if you like. It’s just good!
Creative Considerations:
- To make an excellent marinade, add a tequila and little extra lime and salt! It's amazing!
- Add ¼ c of Chimichurri Sauce to 2 mashed avocados for a quick guacamole!
