Betsy’s Moist, Delicious Lemon Poppy Seed Scones

Ingredients:
  • 2¼ cup flour
  • ¾ cup whipping cream (scant)
  • ¼ cup sugar
  • 1/3 cup butter
  • 1 egg
  • 2 tsp baking powder
  • 1 Tbs grated lemon peel (zest from 1 lemon)
  • Juice from 1 lemon
  • 1-2 tsp vanilla
  • ¼ tsp salt
  • poppy seeds

Directions:

  1. Heat oven to 400 F.
  2. Mix ingredients together in a bowl.
  3. Shape dough into 6 slightly flattened balls and place on ungreased cookie sheet.
  4. Bake 15 minutes.
Makes 6 large scones.
