Ingredients:
- 2 c Betsy's No Garlic Sensationally Saucy Tomato Marinara
- ½ c bell peppers, diced (multiple colors)
- 2 Tbs cumin
- 2 Tbs lemon juice
- ½ tsp sweet paprika
- ¼ tsp cayenne pepper
- pinch crushed red pepper
- 4 eggs
- fresh ground pepper (to taste)
- cilantro (or parsley or sliced scallions for garnish)
Directions:
- In a small skillet, heat the marinara, cumin, lemon juice, paprika, cayenne, and crushed red pepper on medium-low heat stirring frequently.
- Add the bell peppers and simmer until they are softened.
- Create four evenly spaced pockets in the sauce, then crack 1 egg into each pocket, being careful not to break the yolk.
- Sprinkle a little fresh ground pepper over the eggs.
- Cover the skillet and simmer until the egg whites are set.
- Garnish and enjoy!
