Betsy’s No Garlic Shakshuka

Ingredients:
  • 2 c Betsy's No Garlic Sensationally Saucy Tomato Marinara
  • ½ c bell peppers, diced (multiple colors)
  • 2 Tbs cumin
  • 2 Tbs lemon juice
  • ½ tsp sweet paprika
  • ¼ tsp cayenne pepper
  • pinch crushed red pepper
  • 4 eggs
  • fresh ground pepper (to taste)
  • cilantro (or parsley or sliced scallions for garnish)

Directions:
  1. In a small skillet, heat the marinara, cumin, lemon juice, paprika, cayenne, and crushed red pepper on medium-low heat stirring frequently. 
  2. Add the bell peppers and simmer until they are softened.
  3. Create four evenly spaced pockets in the sauce, then crack 1 egg into each pocket, being careful not to break the yolk. 
  4. Sprinkle a little fresh ground pepper over the eggs.
  5. Cover the skillet and simmer until the egg whites are set.
  6. Garnish and enjoy!
