Ingredients:
- 12 oz. cranberries (fresh, rinsed)
- 2 pears, diced (I used Bartlett pears)
- 1 c organic apple cider (or sparkling cider)
- 1¼ c organic coconut sugar
- ¾ c port wine (optional)
- ½ tsp cinnamon
- 3/8 tsp cardamom
- 1.75 oz. low-sugar pectin (I used Sure-Jell)
- Chopped walnuts or pecans (optional)
Directions:
- Combine all ingredients in a medium sized sauce pot and simmer on medium-low to medium heat until the berries burst (about 15-20 minutes).
- Chill until completely cool.
- Stir in chopped nuts before serving if desired.
