Ingredients:
Sauce Preparation:
- 3 Tbs low sodium soy sauce
- 3 Tbs Sake
- 2 Tbs olive oil
- 1 Tbs organic raw sugar
- 1 Tbs Betsy’s No Garlic Sambal Oelek Chili Paste (or red pepper flakes, optional)
- 2 tsp rice vinegar
- ½ tsp ground ginger
Stir Fry Preparation:
- 1 Tbs butter
- 1 Tbs olive oil
- 4 eggs, scrambled
- 1 c rotisserie chicken, shredded (or cooked chicken)
- 1 tsp low sodium soy sauce
- ½ c onion, diced
- ½ c bell peppers, diced (colorful)
- 1 c peas
- 1 c organic corn
- 1 c shiitake mushrooms, chopped
- 3 c organic brown rice, cooked
- scallions (garnish)
Directions:
- In a small mixing bowl, whisk together the sauce preparation ingredients until the sugar dissolves. Set the sauce aside.
- In a wok or large frying pan, scramble the eggs.
- Once the eggs are cooked, add the remaining stir fry ingredients, stirring until uniformly heated.
- Pour in the Sauce Preparation and stir until the sauce is completely absorbed.
- Garnish with scallions.
- Serve and enjoy!
