Ingredients:
- 1 bag organic corn chips (I like blue and yellow for color)
- 2 c Betsy’s No Garlic Latin Love-em! Refried Beans
- 2 c Betsy’s No Garlic Taco Mix
- 2 c Mexican cheese blend, grated
- 1 bell pepper, diced (I used yellow)
- 1 c tomatoes, diced
- 1 c red onion, diced
- 1 c sliced olives
- Becca's No Garlic Guacamole (garnish)
- Fresh cilantro (for garnish)
Directions:
- Preheat the oven to 400 F.
- Spray a baking sheet with non-stick spray, then line the sheet with corn chips.
- Dollop the refried beans and taco mix on each chip then sprinkle the cheese amply over the chips. Bake for 8 minutes until the cheese is melted and bubbly.
- Remove from the oven, the sprinkle the chips with the bell pepper, tomatoes, onions, and olives.
- Dollop with guacamole then garnish with fresh cilantro.
Delicious Additions:
- Avocado, diced
- Jalapeño peppers, sliced
- Sour cream
