Ingredients:
- 6 c new potatoes, cooked, cooled, and diced
- 1 c mayonnaise
- 2 celery stalks, sliced
- 2 boiled eggs, sliced (optional)
- ½ c red onion, diced
- ¼ c Craisins (dried cranberries)
- 3 Tbs dill pickle relish
- 3 Tbs dill pickle juice
- 2 Tbs course ground Dijon mustard
- 1 Tbs parsley flakes (or fresh chopped)
- 2 tsp onion powder
- 1½ tsp salt
- ¼ tsp pepper
- sweet paprika (for garnish)
- celery seed (for garnish)
Directions:
- Add all ingredients into a large bowl and fold together gently.
- Allow to chill for about 30 minutes, then taste. Adjust seasoning if needed.
