Betsy’s No Garlic Color Confetti Potato Salad

Ingredients:
  • 6 c new potatoes, cooked, cooled, and diced
  • 1 c mayonnaise
  • 2 celery stalks, sliced
  • 2 boiled eggs, sliced (optional)
  • ½ c red onion, diced
  • ¼ c Craisins (dried cranberries)
  • 3 Tbs dill pickle relish
  • 3 Tbs dill pickle juice
  • 2 Tbs course ground Dijon mustard
  • 1 Tbs parsley flakes (or fresh chopped)
  • 2 tsp onion powder
  • 1½ tsp salt
  • ¼ tsp pepper
  • sweet paprika (for garnish)
  • celery seed (for garnish)

Directions:
  1. Add all ingredients into a large bowl and fold together gently. 
  2. Allow to chill for about 30 minutes, then taste. Adjust seasoning if needed.
