Betsy’s No Garlic Piña Colada Ginger Cream Sauce

Ingredients:
  • 1 c mashed fresh, sweet pineapple
  • 1 c sour cream or plain yogurt
  • ½ c piña colada mix
  • Finely minced candied ginger to taste
  • 1 square of candied ginger, minced (optional for garnish)

Directions:
  1. Place the pineapple, sour cream, finely minced candied ginger, and piña colada mix in a food process or blender and use the pulse setting briefly until the pineapple is mashed and mixed, but not puréed.
  2. Pour into a serving dish and top with minced candied ginger.
