Ingredients:
- 1 c mashed fresh, sweet pineapple
- 1 c sour cream or plain yogurt
- ½ c piña colada mix
- Finely minced candied ginger to taste
- 1 square of candied ginger, minced (optional for garnish)
Directions:
- Place the pineapple, sour cream, finely minced candied ginger, and piña colada mix in a food process or blender and use the pulse setting briefly until the pineapple is mashed and mixed, but not puréed.
- Pour into a serving dish and top with minced candied ginger.
