Ingredients:
- 3 c chocolate chips (I prefer milk chocolate)
- 2½ c sugar (I used organic raw sugar which gave it a darker color than regular sugar)
- 2 c butter (4 sticks)
- 1 c chopped pecans
Directions:
- Preheat the oven to 200 F.
- Butter a baking sheet.
- Place ½ the chopped nuts on the sheet along with ½ of the chocolate chips.
- Bake for 5 minutes at 200 F to soften the chips.
- In a large sauce pot, combine the butter and sugar and heat on medium until the temperature reaches exactly 300 F with a candy thermometer. Gradually increase the temperature if needed. Stir the mixture constantly and do not overheat!
- Remove the candy mixture from the heat and allow to cool, stirring constantly for 2 minutes. Pour the mixture over the nuts and softened chocolate.
- Lift the baking sheet up several inches and hit it against the countertop several times to pound the air bubbles out of the mixture.
- While the mixture is warm, spread the remaining chocolate chips and chopped nuts over the top. The chips should melt.
- Allow the finished product to sit overnight to harden fully.
- When ready, break into bite sized pieces and enjoy!
Creative Considerations:
Use chopped almonds or other nuts of your choice.
