Ingredients:
- 2+ Tbs butter
- 2 lbs. thoroughly cleaned seafood mix of your choice
- Firm white fish (I like mahi mahi or cod)
- Shrimp
- Scallops
- Mussels
- Clams
- Calamari
- Crab
- Lobster
- 6+ cups Betsy's No Garlic Sensationally Saucy Tomato Marinara
- 2 c organic chicken broth
- 2 c Sauvignon Blanc (for darker color and more robust flavor) or Muscato (for a lighter color and sweeter flavor)
Directions:
- In a large stew pot, heat the marinara sauce on medium heat and add the chicken broth and Sauvignon Blanc.
- While the marinara is heating, briefly sauté the seafood mix in butter until it begins to turn opaque. Do not cook the seafood all the way through. Note: if a less "fishy" flavor is preferred, sauté the seafood until cooked in the sauté pan and omit the juices from the marinara in the next step.
- Add the seafood and juices to the marinara to complete the cooking process. Check often to be sure the seafood does not get overcooked.
- Depending on the amount and type of seafood added, seasonings such as the oregano, onion powder, or salt may need to be adjusted to taste. A pat of butter or pinch of organic coconut (or brown) sugar may be added to balance flavors.
